A blend of 3 vineyards on the Mornington Peninsula. Each vineyard was picked and vinified separately. The fruit was hand sorted and then whole bunch pressed with the juice run direct to a mix of new and older French oak barriques. A natural fermentation completed over the coming months. In total the wine spent 10 months in barrel before being transferred to large concrete vats for a further 2 months maturation before bottling.

The fruit was first chilled and then sorted and destemmed into concrete vats with a small (3-5%) selection of whole bunches. This bottling is a marriage of one 2015 American oak hogshead, two 2012 ex-oloroso sherry butts and one 2013 ex-oloroso sherry butt, all from the Caol Ila distillery. This limited edition whisky benefits from its sherry butt components which contribute plenty of fruit and richness.

Their Adobe Pinot Noir is a particular favourite of ours, hitting that perfect sweet spot between juicy raspberries, fresh violet florals and aniseed spice. Overdelivering hugely for its modest price. A great pair with a rich braised dish.
Intense and bright yellow colour with golden reflections. On the nose it shows floral, citrusy and herbaceous notes over a yeasty and mineral base. The finish is bitter and clean with a long, nutty and refreshing aftertaste.
