400 Conejos Espadin Joven is produced by maestro mezcalero Don Tacho in Santiago Matatlan, Oaxaca. Don Tacho carefully selects the agave Espadin when they have reached maturity after 8-10 years. This mezcal is traditionally produced using a stone oven (horno), horse-drawn tahona, and copper distillation. The Baxendale Vineyard, situated just north of the Mansfield-Whitfield Road, was planted in 1995 in tertiary volcanic soils over rhyolite at 600 metres above sea level. The block has a consistent northerly aspect.
2021 is easily the best vintage of this wine we have seen. Highly lifted aromas of citrus and white flower are nuanced with secondary characters of wax and flint. The mouthfeel is highly restrained with intense minerality and refreshing acidity gives the wine extreme focus and length.
Made from fruit sourced from the Finca Los Alamos vineyard, upper Uco Valley Tunuyan, Mendoza. A unique soil profile of immense paleo channels - alluvial gravels descend to 10's of metres depth.
