The 821 is 100% handpicked Chardonnay grown in the Chablis region, made method ancestrale - aka petillant naturel. They've named it 821 as a nod to the number of days from the flowering to bottle leaving their cellars as a finished (and delicious) wine. Truly a remarkable bottle of bright, saline directness and succulent orchard fruit character.
