Winery Notes "The wine is made from fruit sourced from vineyards in the Coal River (15%) and Derwent (75%) Valleys, along with the North West (8%) and Channel (2%) regions. It is predominantly whole berry (8% whole bunch), fermented with natural yeast, and held on skins for 16-21 days. The wine is then pressed directly to oak (6% new) for maturation and bottled unfined and unfiltered."

Hutton Vale Farm was first established in 1843 by John Howard Angas, and now managed by the current custodians, seventh-generation Stuart and Caitlin Angas. Situated next door to the Mt Edelstone Vineyard that was planted by Ronald Angas, this has to be one of the most historic properties/wineries in Australia.
