Bodegas Gonzalez Byass’ Solera del Tío Pepe is one of Jerez’ great success stories. Relatively humble beginnings in the 1830s have grown over centuries to become one of the most recogniseable producers of Sherry in the world. The term ‘palmas’ is an old one, dating back to around the early 19th Century when the taste for sherry shifted towards the pale, fine boned and flor-aged styles we are now so familiar with. They were the vinos finos - the most delicate and finessed wines - typically destined for ageing under Flor. These barrel selections would mature in the soleras, becoming Uno Palmas (6 years), Dos Palmas (8-10 years), Tres Palmas (15-25 years) or Cuatro Palmas
(35+ years).
