The Don P.X. wines come from Toro Albalá's youngest criadera. Hand harvested and left to dehydrate asoleo, the grapes are concentrated as they dry. What little juice can be squeezed from these sun-drenched little raisins, becomes the basis for their PX solera. You'd be amazed to see just how much freshness can be retained through a process like this, the '23 Don PX dances out of the glass with a grapey tanginess and a lovely whiff of fresh orange zest. The palate is also surprisingly bright, though still indulgently sweet - think toffee, dried figs and a whiff of woody cinnamon quills.
