White flowers, orchard fruit, fennel. The 2026 Sentio Aligoté is wonderfully aromatic with plenty of mid palate fruit and a fine, delicate palate. Chris sources the fruit from the Darling Estate Vineyard, Upper King Valley, who took cuttings from the Hickinbotham vineyard in 2015 and grafted over a section of their vineyard.
The fruit is whole bunch pressed into a mix of large format oak (Foudre/Puncheons) and clay eggs, preserving wonderful aromatics and delivering that moreish, mineral texture.
