Pheasant's Tears is something of a conservation project, a winery founded by John Wurdeman and Gela Patalishvili to preserve the 6000 years of Georgian winemaking history. The Mtsvane is perhaps their most approachable release, and a great entrée into what the winery is all about. Copper coloured in the glass, it's floral on the nose, undercut by a fine orange peel bitterness. The palate has boatloads of structure and tannin, a character that makes it extremely versatile with food and highly moreish.
