Mencia is one of the rare gems that you only find in Spain. Similar to Cab Franc with its crushed raspberries and floral characters paired with firm structure. This is probably the best introduction to variety around, plus it is a stunning wine in its own right. Petalos is a regional expression of Bierzo Mencía, a style largely responsible for putting Mencía on the global wine map, while the Corullon is akin to their 'Grand Cru' bottling.

Michael Dhillon's eponymous side-project allows him freedom to make mistakes he might otherwise not have at his day job at Bindi. The Accidental Red started as a rosé gone wrong, then it became a red gone very right. Shiraz fermented with Merlot skins, juicy and vibrant, even better a little chilled.

The Blue Label chardonnay was made with premium hand picked grapes, from selected local vineyards in the Yarra Valley. 2021 was a great vintage yielding fully ripe grapes with great balance of acidity. The wine was made in a traditional style using French Oak. It is medium to full in body with creamy almond meal texture and pleasing acidty. Bottled under screw-caps to ensure quality and consistency.

Dingle Single Malt represents a milestone in the distillery's history and a huge step forward in its growth journey. In doing so it becomes one of few Irish distilleries to produce a core single malt product made entirely with its own spirit. Triple distilled, non-chill filtered Dingle Single Malt was matured in PX Sherry (61%) and Bourbon (39%) first fill casks and comprising predominantly six to seven-year-old spirit.
