Although "Le Chavignol" is Boulay's starting Sancerre this is no simple, entry-level wine. Like all of Boulay's wines, this is handmade in artisanal quantities from 100% Domaine, 100% Chavignol vineyards. The vines are aged between 30-40 years and the wine is fermented and aged in tank, on lees, and is bottled with only a very light filtration.
