From two chardonnay parcels, on the back of the Cramant hill. 40-year-old vines are currently being converted to organic and biodynamic management and are growing on calcareous soils that give the wine amazing tension and minerality. The vinification is carried out with spontaneous fermentation by indigenous yeasts, followed by aging in wood and tank.
Grauves is a fascinating terroir which is finally gaining some notoriety. Being on the cool side of the hill, it ripens later and is less impacted by the warmer harvests. Bottled on crown capsule at the moment. Newly released cuvee. The chalk is very subtle on the palate and the salinity and elegance of the terroir shines.
