After 6 years ageing under a thick, fluffy layer of flor, El Maestro Sierra bottle's their fino en rama - unfined and unfiltered. There's a lovely vinous quality to this fino, almost like base wine in a Blanc de Blancs Champagne. Notes of freshly fermented sourdough and chamomile flowers, and a hint of bright green Spanish olives in brine.
