The ability to blend many vintages of Peppertree Vineyard Shiraz provides us with great consistency of quality and flavour in our Peppertree Sparkling Shiraz. Made in the traditional method, only 500 cases of this celebratory bubbles are available each year.With a secondary ferment in the bottle, aged on lees for 18 months, with a dosage of eight-year-old fortified Shiraz creates a sparkling wine with a youthful lingering effervescence complemented by a leathery structure expressing the aged components. Bright ruby in the glass with a fine bead on the tongue that shows lifts of youthful sour cherry with earthly undertones leading in to a lingering plummy richness. - Winery Notes
