"The fruit was hand harvested on two dates to allow for more ripeness and complexity. Both lots were destemmed and fermented in stainless-steel vats and a new puncheon barrel. After three weeks on the skins, the wine was pressed to French oak (50% new) where it matured for 20 months until it was racked and bottled. 2019 was a super aromatic year. It shows in this wine especially. Fresh mint, smoky shiso leaf, intense black fruit, rose and wisteria, spicy clove, and citrus peel. There's an earthy, chalky loveliness to this wine, but make no mistake... She will dominate you. I would definitely eat food with this wine.
