100% Chenin Blanc from four different vineyards. All of them are dryland bush vines which grow respectively within decompose granite and iron-rich soils, and all are 40 years old or greater.
In the winery the graps were whole bunch presed, settled for a day before transfer to large old oak and concrete egg for natural fermentaion. The final blend consists of 70% decomposed granite soils & 30% from red iron-rich soils. The decomposed granite components of the wine are linear, mineral and tight, falling within the white fruit spectrum, adding texture, freshness and drive. The iron-derived influences, on the other hand, impart beautiful yellow-fruit spectrum aromatics, and opulence.
