The Chardonnay was hand-picked and whole bunch pressed, juice racked, with light lees, into Chassagne Barriques for wild yeast fermentation. The wine spent 12 months in barrel with a further 4 months on lees in tank. Chassagne is chosen specifically for this site as the profile suits Beechworth Chardonnay perfectly.
