"Sang de Pigeon (pigeon's blood) is a nod to my former life as a jewellery valuer. It's the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The precious grapes for this fragrant and deeply coloured wine were grown far to the south-east, in South Australia's Barossa Valley.
High winter rains preceded a cool spring. Late budburst, flowering and a cool autumn combined for a very late vintage. Hand-picked from Stonewell Road and Smyth Road on 23rd March and 5th April, 62% destemmed, 38% whole bunch, wild fermented, pressed to French oak, matured for 15 months in barrel (24% new).. 4320 bottles produced. "Spicy and perfumed aromas of blood plums, blackberry compote, coffee beans, dried herbs and violets. The palate is medium- to full-bodied with a creamy texture and finely integrated tannins. 38% whole-cluster fermentation brings lovely austerity and a savory component, with lingering flavors of black olives, cedar and ferric earth." 93/100 Ryan Montgomery, jamessuckling.com
