The other white grape of Burgundy, Aligoté often gets lost in the shadow of Chardonnay. It's more than just a poor imitation though, Aligoté is very much its own grape. Take this wine from Terrason, for example - fresh cut lemon citrus, grated ginger and soft, ripe pears, with a salty sea spray finish.

"Hand harvested and whole bunch pressed in my one tonne vertical press, juice is oxidised then natural ferment in 500l puncheons, aging on fine lees for 12 months. The wine is then racked to tank for 6 months before being prepared for bottling.
Aromatics of alpine herbs, sesame, white flowers, spice and some lees derived reduction which blows off with a little air. The palate is surprisingly concentrated, delivering a core of citrus fruit and mineral energy, the acid is vivid yet harmonious - carrying the wine through, to a long, persistent finish that echoes with saline nuance and lingering candied citrus peel." - Winemaker, Marc Lunt
