Domaine Vico ' Bois du Cerf Rouge 2022
60 % Niellucciu and 40% Sciaccarellu grown on 30 year old vines planted on schist and basalt with south-east exposure. 4000 vines per hectare. Handpicked, 90% destemmed and 10% whole bunch harvest. Fermentation in concrete tank with indigenous yeast. 15 days of Maceration. 12-18 months of ageing in concrete tanks. No fining and no filtration.
