As local as one could ask, with the distillery a mere 2km away from us in the old Royal Hotel in Clifton Hill... how could we say no!
Layers of bright citrus from fragrant orange, mandarin and native myrtle melt into the warmth of Tasmanian pepperberry and the heady spice of coriander and lemongrass. Earthy undertones of fresh picked rosemary and green tea are rounded by lashings of local rooftop honey and freshly churned butter.
