Paul Osicka Majors Creek Vineyard Shiraz 2021

"The lead into the 2021 season had good winter rainfall followed by a mild growing season. A very low yielding vintage for our vineyard that resulted in concentrated wines and the mild season contributing to vibrancy of fruit.

The 10 Ha of Shiraz was handpicked in separate parcels dependent on soil type. Bunch sorted in the vineyard, the fruit was chilled overnight before it was processed and then berry sorted post destemmer. Fermented in small open top pots, the fruit spent just under 4 weeks on skins before pressing into French oak (20 % new) maturation. The new oak component was a large vat, which we have found respects the fruit character and adds complexity and texture. Racked once out of oak and bottled in June 2022." - Simon Osicka, Winemaker
