Finely structured tannins frame this medium bodied, generous wine, finishing with good balance and length. The Billi Billi Shiraz is sourced from a selection of premium cool climate vineyards throughout Victoria; predominantly the Grampians including a portion from the Mount Langi Ghiran vineyards. This cool climate source imparts a freshness onto the wine, with lifted florals on the nose and bright fruit that is underlaid by depper, more savoury shiraz characters like dark, black plums and soft whiffs of cocoa … more

Sourced from a small selection of our favourite shiraz blocks, the grapes were both hand and machine picked before fermentation in the traditional open top vats. The wine was then matured in older, large format French oak casks. These 2,700 litre casks highlight the fruit purity whilst making sure that oak isn’t the dominant character.

In Australia, the term sherry is off limits, so our version of the classic style is known as Apera. It's based on the 'fino' style of light dry sherry, which is made in Jerez and surrounds using the Palomino variety. What starts as a light, crisp white wine is then fortified (i.e., it's alcohol level is boosted with the addition of a spirit) before ageing under what's called a 'veil' of flor yeast, which carpets the surface of the wine … more

Producer notes "Sensuously fragrant with a backbone of acidity. An inviting bouquet of dark cherry, dried herb, game and toasted almond notes complemented with a lovely floral overtone. The wine still retains a firm backbone of acidity and fine tannin to ensure drinkability now with the ability to age well."

Chrismont has long realized the potential of Pinot Grigio as a variety to excite the palates of Australian wine drinkers, and boasts some of the most established vines in the King Valley. What makes our Pinot Grigio style so distinctive is the decision of when to harvest, which comes when we see the first development of green melon flavours in the fruit and its acidity levels still around 7.5 to 8.0g/L. This usually gives a potential alcohol of 11.0 with … more

Chrismont has long realized the potential of Pinot Grigio as a variety to excite the palates of Australian wine drinkers, and boasts some of the most established vines in the King Valley. What makes their Pinot Grigio style so distinctive is the decision of when to harvest, selecting fruit just at the point of developing crisp green apple and honeydew melon scents. It's dry, fresh and eminently drinkable - just what we want in a Pinot Grigio.

"It's grown at about 300 metres above sea level on vines that are now nearly ten years old. It now comes in a proprietary 'King Valley' prosecco bottle, which is lovely to see - a real sign of confidence/harmony for the region. Reckon they are bang on with this release. It's fine and crisp but not at all lacking in flavour. Red apples galore. Some bready complexity. More than an ounce of finesse. More-ish lisp of fruit sweetness. Tick tick … more
