The Merlot was destemmed and fermented in an open top tank. Block 3 Cabernet was fermented in 600L rotary barrels, and block 1 in open top puncheons. Graciano from Two Wolves was fermented in an open top vessel. Right Left Syrah was 100% whole cluster. All ferments were carried out by native yeast, and after pressing the wines were aged in French oak before being blended and bottled in the summer of 2021. On the nose you may find Luxardo cherries, raspberry liquorice, violets, deep dark fruit, fresh cut herbs, and pencil shavings... with the palate gifting you a freshness and bright lift. This wine has a lightly tannic grip and the fresh mint stays with you. Drink this by the campfire. Hand harvested. We picked on two separate days. The first pick we destemmed the fruit and fermented in our square cement tank. The second pick was whole cluster fermented in stainless steel. After fermentation, both lots were pressed and matured separately. Always a native fermentation under this roof, this wild animal is only slightly tamed by its elegance and restraint. Fresh pine, oregano, cranberry, concentrated raspberries, violets, chamomile, and black peppercorn. The tannins are alive and well, mouthcoating and powdery. The length and persistence here is unquestionable. The fruit harvested in the early morning then was 100% destemmed and handsorted. Clone 337 was fermented in oak rotary fermenters, clone 191 was in open-top oak barrels, and the See clone was fermented in an open top stainless-steel tank. The wine spent an average of 30 days on skins before being gently pressed into 50% new French oak barrels for maturation. This wine belongs next to a dirty martini in a lounge with trouble on the mind. Or just drink by your fireplace and make good decisions. Up to you. Dusty leather, camphor, cinnamon, blackberries, green spice, and the sweet scent of a cigar box. So much fruit in the mouth, balanced with juicy acid and tannins that grip and then ease. This is a powerful wine. Pair with lingerie and hand sanitizer. Both lots were destemmed and fermented in stainless-steel vats and a new puncheon barrel. After three weeks on the skins, the wine was pressed to French oak (50% new) where it matured for 20 months until it was racked and bottled. 2019 was a super aromatic year. It shows in this wine especially. Fresh mint, smoky shiso leaf, intense black fruit, rose and wisteria, spicy clove, and citrus peel. There's an earthy, chalky loveliness to this wine, but make no mistake... She will dominate you. I would definitely eat food with this wine. Maybe some green curry, udon, pasta arrabbiata, with Edith Piaf playing in the background.
