Notes from the BodegaA limited release of 3,000 bottles (for the world), this P.X. is a nod to the past when Pedro Ximénez was often a vintage wine and released young without extended ageing, nor the resulting rancio characters that such maturation brings. This wine comes from late-harvested P.X. grapes from one of Montilla's best vineyards. Fortification is carried out only with top-quality, wine-based spirits. After 18 months resting in the traditional, large, cone-shaped 'amphora' of the type used in Montilla-Moriles for centuries (more accurately called tinajas or conos), the wine is ready for release as an ultra-pure, viscous, incredibly intense and naturally sweet dessert wine. For those who have worked with the previous bottlings, this is a very similar wine.  For those new to this wine, this isn't your opaque, black, rancio style of PX. Instead, you can expect a bright and perfumed, amber\/brown coloured wine of wonderful vibrancy, fruitiness and freshness, with dried raisin, leatherwood honey, cold tea, nutmeg, molasses and fresh resin notes. Of course, it is very sweet yet it's balanced by just the right amount of acidity. The wine can be consumed in the same way as an aged PX; served with coffee, tea or with chocolate desserts. This new release comes from a selection by Eduardo Ojeda--the person in charge of making this wine for the last decades of casks from the usual solera together with younger criaderas from the Macharnudo Alto estate, where the winery owns almost three hundred hectares. We are looking for particular finesse and freshness in this saca. The wine is now more fluid and fresh than in previous editions, without in any case losing its authenticity. Its average age is close to eight years, that is, a couple of years less than the previous sacks.   The nose shows very complex and intense aromas, and a remarkable roundness in the palate (the traditional buttery touch of old finos). This is a wine for connoisseurs, bottled almost unfiltered, en rama, in order to preserve its golden color and racy character. It can be decidedly enjoyed upon release, but its evolution in bottle will continue to delight consumers for many years, provided it is stored with the same care as any other fine white wine.   It performs best at temperatures ranging from 9-10º C, where it shows a lighter and fresher profile, to 12-13º C, where it fully displays its rich and complex aromatic range. One such vessel was a magnificent tonel gordo (120 arrobas, i.e. a 2,000-litre cask) situated in a corner of the room, separated from the main rows of casks that were standing by the wall. Navazos had this single large cask filled with a selection of the best Amontillados of the house (the same genealogy as the previous releases: No. 37 and No. 58, etc.), refreshed with a moderate proportion of the extraordinary Manzanilla Pasada from Misericordia. Its age is estimated at around 12 years, of which the past seven--as per the 89 Grain Whisky--have been spent in a single cask from a solera of very old, dry Oloroso Sherry.It's a Whisky of remarkable character and complexity. It boasts an enticing peaty touch to the nose (which may give some a clue as to its origin) which balances beautifully with the intense influence of the old Sherry cask. Fragrant and soft with poached pear, roasted malt and a hint of coffee bean and crème brûlée. The palate is sweet, intense and softly fruited, with florals, butterscotch and plenty of peaty smokiness--like Balvenie meets Islay. It's got some power--even at 46% it's happy with a touch of water--yet remains stunningly balanced. Finishes with notes of wild honey and, again, that delicious twang of iodine.
